Ingredients

  • 10 oz Whole-wheat spaghetti
  • 3 tbsp Extra-virgin olive oil
  • 6 cloves Garlic, thinly sliced
  • 1/4 tsp Red pepper flakes (optional)
  • 3 cups Broccoli florets, small
  • 1/4 cup Fresh parsley, chopped
  • 1/4 cup Grated Parmesan
  • 1/2 Lemon

Directions

  1. Cook the spaghetti in salted water. Add the broccoli for the last 3 minutes. Save 1 cup of pasta water, then drain.
  2. While the pasta cooks, warm the olive oil and garlic in a large skillet over low heat for 4 to 5 minutes until the garlic is pale golden. Do not let it brown. Add pepper flakes if using.
  3. Add the pasta, broccoli and 1/2 cup pasta water and toss over medium heat until glossy, adding more water if needed.
  4. Toss with parsley, a squeeze of lemon and the Parmesan.
